My Recipes - Stuffed Omlette(Veggie or Keema)

Very good for a weekend breakfast as it takes a bit more effort then the regular omlette.. but worth the effort :)

Ingredients (Serving for 2 people)
---------------
Onion - 1 small , finely chopped
tomato- 2 small , finely chopped
ginger - 1/2 tsp , final chopped
green chilli - 2 small, finely chopped
mushroom - 4.5 small, finely chopped
greens - either spinach or back choy - 1 cup , chopped
green coriander - finely chopped , per taste
capsicum - 1/2 half cup finely chopped
Eggs - 4
Butter - 1 inch cube
Salt , black pepper per taste.

Warm the fry pan , and put butter and Wait till it melts. Put all the Ingredients except eggs in the pan , put salt and fresh black pepper stir and cover. Keep on stirring till everything is cooked (6-7 mins on medium flame) . When cooked this paste will be in slurry form. Take out from the pan and keep aside

Break the eggs in bowl add salt per taste and beat to make a uniform mix. Add a tsp of milk and mix well. Pour the egg mix on a warm pan and turn it over once done on first side. Spread the cooked Ingredients on the omlette uniformly on one half of the omlette and roll over the other half to make a semi -circle.Cut in 2 quarter's before serving.

As a non veg variant , if you have keema (chicken prefered) left over( 1 cup) , you can stir fry the keema in butter , onion , tomottoes , ginger, green chilli and stuff the same way in the omlette as mentioned above.

Enjoy with toast :)
